Grilled Salmon with Bacon and Corn Relish

  • 6 slices bacon, cut crosswise into 1/2-inch pieces
  • 2 ears white corn
  • 1/4 cup chopped green onions - white and light green parts separated from green tops
  • 1/4 cup diced red bell pepper
  • salt and ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 teaspoons olive oil
  • 1 tablespoon rice vinegar, or more to taste
  • 1/2 teaspoon vegetable oil
  • 2 (8 ounce) center-cut boneless salmon fillets
  • 1 pinch cayenne pepper, or to taste
  • 1 cup fresh spinach leaves (optional)
  1. Preheat an outdoor grill (preferably charcoal) for high heat and lightly oil the grate.
  1. Place bacon in a skillet over medium heat and cook until browned and crisp, 8 to 10 minutes.
  2. Cut kernels from corn ears into a large bowl using a sharp knife held at a 45-degree angle. Scrape cobs with the back of the knife into the bowl to get the juices.
  3. Stir white and light green parts of green onions into bacon and add red bell pepper; cook and stir until vegetables just start to become tender, about 2 minutes. Stir corn into bacon mixture and let corn just warm through. Season with salt, black pepper, cayenne pepper, a few chopped dark green onion tops, olive oil, and rice vinegar. Turn off heat under relish.
  4. Spread vegetable oil onto both sides of salmon fillets and season fish with salt, black pepper, and cayenne pepper.
  5. Cook on preheated grill until fish shows good grill marks, the flesh flakes easily, and fish is still slightly pink in the center, about 5 minutes per side. A crack that opens up in the salmon flesh as you cook will let you see how done the salmon is in the middle.
  6. Divide spinach leaves onto 2 plates and top each with a salmon fillet and half the bacon relish. Sprinkle on a few green onion tops for garnish.

Taste and Tell Grilled Tortilla Wraps


  • 1/2 Cup Mayo
  • 2 Tbs Yellow Mustard
  • 1 Tbs Honey
  • 9-12 Slices Swiss Cheese
  • 6 Flour Tortillas

Meat Choices

  • Deli Sliced Ham
  • Shredded Chicken
  • Turkey
  • Real Bacon Bits


In bowl mix mayo, mustard and honey.

Layer in tortillas with cheese, then mayo mix, then meats. Roll up.

Grill at medium heat in frying pan seam side down turn when starting to brown and cook until cheese melts.

Ted and Dana's Artichoke Dip


  • 1 Can Artichokes shredded in food processor
  • 1/2 Cup Real Bacon Bits
  • 8 oz Cream Cheese
  • 6 oz Parmesan Cheese softened
  • 2-3 Green Onions chopped
  • 3/4 Cup spinach shredded in Food Processor

Mix all ingredients with hand mixer put in 9 inch pie pan Bake for 50 minutes at 350˚ Serve with Pita Chips or Wheat Thins.

Farmer's Breakfast


  • 5-6 Strips of Bacon
  • 3 Medium Potatoes Chopped
  • 1/2 Onion Chopped
  • 3 Eggs, Scrambled (Not Cooked)
  • Cheddar Cheese
  • Salt 
  • Pepper

In Skillet cook bacon  until crisp. Remove bacon and crumble then set aside. 

Drain most of grease, leaving just enough to lightly coat onion and potatoes. 

Cook onion and potatoes until browned and potatoes are started to soften. Add Eggs and cook until eggs are cooked to your taste. 

(I like mine well done so I cook them a long time. This also makes the potatoes and onions get that awesome crispy taste.)

 Add Cheese and bacon and heat until cheese mostly melts. Salt and pepper to taste!

Chicken Cordon Bleu Pasta


  • 2 Chicken Breasts Cooked and Cut into Strips
  • 3/4 C. Bacon Cooked and Cut into Strips
  • 3/4 C. Diced Ham
  • 10 oz. Penne or Ziti PAsta
  • 2 C. Heavy Cream
  • 8 oz. Cream Cheese
  • 1/2 tsp. Onion Powder
  • 1/2 tsp Garlic Salt
  • 1 1/2 C. Shredded Swiss Cheese
  • Bread Crumbs

Cook Pasta according to box directions and drain. 

Heat cream cheese in sauce pan until melted stir in heavy cream. stir until completely combined. Add Onion Powder and garlic salt. Stir in 1 cup of cheese. until smooth.

In casserole dish layer noodles, chicken bacon and ham. Pour sauce over top and sprinkle with 1/2 cup of cheese and bread crumbs.
Bake at 350˚ for 15 Minutes.

Smith Cheesey Corn Potato Chowder


  • 1 Cup Finely Chopped Onions
  • 1 Cup Finely Chopped Celery
  • 1/2 cup Shredded Carrot
  • 2 1/2 cups diced Potatoes
  • 1 Cup Flour
  • 1 1/2 tsp. Salt
  • 1 1/2 Tbs. Sugar
  • 3/4 Cup Butter
  • 4 cups Half & Half Cream
  • 1/8 tsp. Pepper
  • 1 Can Corn
  • 2 Cups Shredded Cheese (Optional)
  • 1 lb. Bacon Crumbled (Optional)
Put onions, celery, carrots and potatoes into soup pan and add enough water to just barely cover vegetables. Simmer over medium heat until potatoes are tender.

Melt butter in sauce pan and add flour, salt, pepper, and sugar. Blend for a minute or two. Add cream and cook, stirring with a wire whisk until smooth and thick. Add sauce and corn to undrained vegetables and heat thoroughly. Add cheese and bacon at this point if desired.

Sargento's Chicken Ranch Pizza


  • 2 cups cooked chicken, torn or cut into bite-sized pieces
  • 2/3 cup ranch dressing, divided
  • 1 (12-inch) prepared pizza crust (see pizza crust recipe)
  • 6 slices bacon, cooked crisp, crumbled
  • 1/4 cup sliced green onion
  • 2 cups shredded Mozzarella cheese
  • 1 cup shredded cheddar cheese
Combine chicken and 1/3 cup dressing in medium bowl; mix well. Spread remaining 1/3 cup dressing over pizza crust. Spoon chicken mixture over crust; top with bacon, onion and cheese.
Place on baking sheet; bake in preheated 400°F oven 14 minutes or until crust is browned and cheese is melted.

BBQ Chicken Pizza


Smooth desired amount of BBQ SAUCE on crust mix in Minced Garlic, then add chopped ONION and COOKED CHICKEN, sprinkle till covered with CHEESE.
Cook for 15 min at 450˚.
