Geno's Pie crust

  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup unsalted butter chilled and cut in small pieces
  • 1/4 - 1/2 cup ice water
In the bowl of a food processor, combine flour, salt, and sugar. Add butter, and process until the mixture resembles coarse meal, 8 to 10 seconds.

With machine running, add ice water in a slow, steady stream through feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time.

Divide dough into two equal balls. Flatten each ball into a disc and wrap in plastic. Transfer to the refrigerator and chill at least 1 hour. Dough may be stored, frozen, up to 1 month.

Jacquelle's Amazing Brownies

  • 1/2 cup butter, melted
  • 1 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
Mix all the above together. In separate bowl mix the next items together:
  • 2/3 cup flour
  • 1/2 cup cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp salt
Gradually add the dry mix to the wet mix until mixed together.
Pour into 9-inch round cake pan which is lined with foil and had been sprayed with cooking spray.
Bake at 350 degrees for 25 minutes (It is fudgy and will not test done but take it out anyway.) Let it cool completely.

It has a topping that you can make while it is baking and then let it sit in the fridge until it is cool:
1 (8oz) pkg cream cheese
1 cup powdered sugar
1/2 cup whipping cream (that has been whipped)
Mix those together and spread on top of brownie. Keep in fridge until you are ready to eat it. It cuts a lot easier when it is cold.
You can also serve with cherry pie filling, if you want.

My variation;
Follow original recipe except double it and add nuts and chocolate chips! Your life will never be the same!

My topping variations:
Peanut Butter -
1/3 cup pb
2 TBS soft butter
2 TBS sugar
1 TBS flour
1 egg
Mix together, drop on brownie and swirl with knife. Bake as directed above.

Cream Cheese -
8 oz cream cheese
1/2 cup sugar
1 tsp vanilla
1 egg
Mix together, drop on brownie and swirl with a knife. Bake as directed above but it will probably take longer to bake so just watch it.
