Mexican Stuffed Shells

  • 1 lb. ground beef
  • 1 package low-sodium taco seasoning
  • 4 oz. cream cheese
  • 14-16 jumbo pasta shells
  • 1.5 cup salsa
  • 1 cup taco sauce (This is a smooth, tomato based sauce found in the Mexican section)
  • 1 cup cheddar cheese
  • 1 cup monterey jack cheese
  • 1 onion
  • 3 green onions (optional, for topping )
  • Sour cream (optional, for topping)
1.) Preheat oven to 350°.
2.) In a frying pan cook ground beef; add taco seasoning and prepare according to package directions (if using onion, chop and add here).  Add cream cheese, cover and simmer until cream cheese is melted. Blend well. Set aside and cool completely.
3.) While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.
4.) Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. Cover shells with taco sauce.  Cover with foil and bake for 30 minutes.
5.) After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed.

Top with any condiments you’d like (green onions, black olives, etc.) Serve with sour cream and/or more salsa.

Doritos Taco Bake


  • 1 Pkg Crescent Rolls
  • 1 lb. Hamburger
  • 1/2 pkg Taco Seasoning
  • 8 oz Sour Cream
  • 14 oz Can Diced Tomatoes
  • 8 oz Can Tomato Sauce
  • 1 Cup Cheddar Cheese
  • 15 oz bag Nacho Cheese Doritos

Brown Hamburger and drain.
Add Taco Seasoning, tomato sauce, a little water, and diced tomatoes. Simmer
Press Crescent rolls into 9x13 pan press seams together to form crust.
pour in meat mixture then sour cream, then Cheese.
Crush about 3/4 bag of doritos put them on top.
Bake at 350˚ for 30 minutes.

Italian Crescent Casserole


  • 1 lb. Ground Beef Cooked and drained
  • 1 C. Garlic Tomato Pasta Sauce
  • 1 Can refrigerated crescent dinner rolls
  • 1 1/2 C. Shredded Italian Cheese Blend
  • 1/4 tsp Basil

In skillet mix cooked beef and pasta sauce until warm.

Separate crescent rolls place in 9 inch glass pie plate in spoke pattern with tips overlapping rim. Press together dough on bottom of pan.

Sprinkle with 1 cup cheese. Spoon beef mix in and bring tips over filling to meet in center not overlapping in process. Sprinkle with remaining 1/2 cup cheese and basil.

Bake 15-20 minutes at 375˚

Philly Cheesesteak Sloppy Joes


  • 1 Tbs Olive Oil
  • 1 Med. Onion Chopped
  • 1 Green Pepper Chopped
  • 1 Pound Ground Beef
  • 2 Tbs Steak Sauce
  • 1/2 C. Beef Stock
  • Salt and Pepper
  • Rolls or Buns

Cheese Sauce

  • 1 Tbs Butter
  • 1 Tbs Flour
  • 1 C. Milk
  • 1 C. Provolone Shredded

In Skillet cook onion and green pepper in oil until soft. Add beef and cook until browned. Drain fat. Stir in steak sauce and beef stock and season with salt and pepper. Bring to boil and cook 2 min. 

Cheese Sauce
Melt butter in sauce pan. Stir in flour and mix into butter well. stir in milk and bring to bubble and let thicken. Turn off heat and stir in cheese. 

Spoon beef mixture on toasted buns and add cheese sauce.

If desired add mayo, lettuce, tomato, and onion to sandwhich.

Hamburger Wreath

  • 1 1/2 lbs of Ground Beef
  • 1 Onion Chopped
  • 3/4 Cup Ketchup
  • 2 Tbs Mustard
  • Cheddar Cheese
  • Sliced Dill Pickles
  • 2 Cans Crescent Rolls
Brown Beef and onions. Mix in ketchup and mustard. Unroll crescent rolls and on pan covered in parchment paper lay out separated triangles in a ring. I did mine so every other one was facing in and out. It helped to keep them separated. Press dough together where it does touch. put beef on ring of dough and sprinkle cheese and pickle slices on top. Then fold dough over the top and press into bottom. Bake for 20 minutes at 350˚. Can be served with lettuce and tomato if desired.

Cowboy Casserole


  • 1 1/2 lb.s Ground Chuck
  • 1 Medium Onion Finely Chopped
  • 1 Cup Shredded Carrots (Optional)
  • 1 Tbs Minced Garlic
  • 1 Can Whole Kernel Corn Drained
  • 1 Can Cream of Mushroom Soup
  • 2 Cups Shredded Cheddar Cheese
  • 1/2 Cup Milk
  • 4 Tbs Sour Cream
  • 1 Bag of Crispy Crowns Tater Tots

Pre-heat oven to 350˚ Cook onion until translucent add garlic cook another minute. Add beef and cook until brown through. Drain and set aside. 

Layer tater tots on bottom of Greased Casserole dish. In small bowl combine soup, milk, and sour cream. whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheese and gently mix. 

Pour hamburger mixture over tater tots then layer with tater tots and sprinkle with remaining cheese. Bake for 25-30 minutes until golden brown and crunchy.

Frito Chili Pie


  • 3 cups Fritos Corn Chips(Lightly Salted)
  • 1/2 Onion Chopped
  • 1 19 oz. Can Chili (I prefer no beans)
  • 1 cup grated American Cheese


Cover bottom of pan with 2 cups fritos. Add onion then spread chili on til evenly spread. Sprinkle with cheese and remaining chips.


(NOTE; portions of ingredients are not strict you can mess around with it til its the amount you like. I probably use less of the chips and cheese.)


Bake at 350˚ for 15 min or until warm. Eat by itself or serve over rice.

Mom's Who Think Skillet Taco Supper

  • ½ lb Lean Ground Beef 
  • 1 Pkg (1 oz) Taco Seasoning Mix 
  • 2 ¼ cups Water 
  • 1 ½ cups Uncooked Pasta (I Like Mini Farfalle) 
  • 1 ½ cups Frozen Corn 
  • 1 can (15 oz) Kidney or Pinto Beans, Drained, Rinsed 
  • 1 Medium Tomato, Chopped (¾ cup) 
  • ½ cup Sour Cream 
  • 1 cup Shredded Cheddar Cheese (4 oz) 
  • 1 Tbs Chopped Fresh Chives


1. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. 
2. Stir seasoning mix, water, uncooked pasta, corn, beans and tomato into beef. Heat to boiling; stir.


3. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until pasta is desired doneness and most of the liquid has been absorbed.


4. Stir in sour cream. Remove from heat. Sprinkle with cheese and chives.


5. Cover; let stand 2 to 3 minutes or until cheese is melted.


6. Serve with tortilla chips.

Liz's French Dip Sandwiches

  • Oil
  • 1 Small Onion
  • Garlic Powder
  • 2 Beef Bouillon Cubes
  • Roast Beef Sandwich Meat
  • Provolone or Swiss Cheese
  • French Rolls
Put small amount of oil in bottom of saucepan and add chopped onion and cook for a minute. Add Garlic powder, 2 cups water, and bouillon cubes, and meat, Boil for about 10 min. Meanwhile cut rolls and put oil and garlic powder on one side and provolone on the other. Put in oven for 5 min at 325˚. Put meat on rolls and put leftover juice in bowl for dipping.

Suzanne's Crock Pot Meatloaf


  • 2 Beaten Eggs
  • 3/4 Cup Milk
  • 2/3 Cup Bread Crumbs
  • Grated Onion
  • 1 tsp. Salt
  • 1/2 tsp. Ground Sage
  • 1 1/2 lb. Ground Beef

Sauce
  • 1/4 Cup Ketchup
  • 2 Tbs. Brown Sugar
  • 1 tsp. Dry Mustard
  • 1/4 tsp. Ground Nutmeg
Combine eggs with milk, bread crumbs, onion, salt, sage, and meat.
Shape to fit crockpot. Cook on low for 5-6 hours.

combine sauce ingredients and pour over meatloaf. Cook on high for 15 more minutes.

French Onion Burgers


  • 1 lb. ground beef
  • 1 can Campbell's french onion soup
  • 4 slices cheese ( I like swiss)
  • 4 round hard rolls
Shape beef into 4 patties 1/2 inch thick. Cook patties in skillet until browned. drain fat. Add soup and heat to boil. Cover and cook over low heat for 5 min. or until done. top with cheese. Serve on rolls with soup mixture for dipping.

Sloppy Joes


  • 1 lb. Ground Beef
  • 1 Stalk of Chopped Celery
  • 1 Tbs Minced Garlic
  • 2 8 oz. Cans Tomato Sauce
  • 1/4 c. Ketchup
  • 1 Tbs Worcestershire Sauce
  • 1/8 tsp Pepper
  • 1/4 c. Bbq Sauce
Brown beef and then add all ingredients and mix and then simmer for 10 min if not saucy enough add extra can of Tomato Sauce and BBQ/ Ketchup.
